because I have lost a whole lot of tuna, wahoo, and
mahi to sharks....Not because of how they taste. If I
can figure out how to land the damned things on the
boat without having somebody's foot bit off, I may
just keep one. The Marshallese say that shark is good
eating...but then they say that of any fish out here.
They have yet to turn down any fish I give away.
Tried a new recipe for mahi that we absolutely love:
Mahimahi fillets (about an inch thick)
crab meat (false crab was used for this recipe)
Cooked Shrimp (had some left over shrimp scampi)
mayonaise
onion powder
garlic powder
salt and pepper to taste
I used fresh Mahimahi about 8 ounce pieces. Cut a
slit on the side so it opens like a Pita bread. In a
food processor, chop the crab meat, cooked shrimp,
onion and garlic powder. Do not process until paste,
but stop while its still chunky. Add mayo and process
until mixed. At this point, it will make a nice
filling for a sandwich. Fill each fillet with this
mixture, I just stuff it in. Brush fillets with oil
(can use olive, vegetable, or butter...I used
macadamia nut oil). Salt and Pepper to taste. Broil
in Oven (I used the highest temperature setting) six
minutes on each side. Came out pretty good. I'm
going to try it on Ono, next. Doesn't that sound
good?
