I caught a shark about three years ago (a small bull shark) and it was very good.   I think I dulled about 4 knives just too skin it but it was firm white and had a surprisingly mild taste to it.   Was great baked and broiled.
 
One thing that has to be considered is the size when deciding when to eat them.  Since they are the apex predator any toxins get concentrated in them.  Same thing with barracuda.  Only eat the small ones.

Aloha Les and the rest of the group,
Just wondering, have you eaten shark and what are your thoughts. Also is their a diffrence in taste from one to another (Hammerhead to blue to lemon) Never have eaten any, that I know of (heard McDonalds fish was shark but that is untrue).
